To Die For Blueberry Muffins

Since I am in the throes of “blueberry heaven” at the moment, I thought I’d share another blueberry recipe this week. Since my contribution last time was Blueberry Sour Cream Pancakes, I thought I’d continue on the breakfast theme (although we also enjoy muffins as a quick snack).

Our whole family likes blueberry muffins and, while I have tried numerous recipes in the past, I finally have one that is my favorite! I originally found this particular version at All Recipes but made a few changes to suit our tastes. I am planning to make these for breakfast Wednesday morning.

To Die For Blueberry Muffins

1 1/2 cups all-purpose flour
3/4 cup white sugar
1/2 tsp salt
2 tsp baking powder
1/3 cup vegetable oil
1 egg
1/3 cup milk
1 cup fresh blueberries

Crumb Topping:
2 tbsp white sugar
2 tbsp brown sugar
2 tbsp all-purpose flour
2 tbsp cold butter
3/4 tsp ground cinnamon

Preheat oven to 400 degrees. Grease muffin cups or line with muffin liners.

Combine 1 1/2 cups flour, 3/4 cup sugar, salt and baking powder. Place vegetable oil into a 1 cup measuring cup; add the egg and enough milk to fill the cup. Mix this with flour mixture. Fold in blueberries. Fill muffin cups 3/4 full and sprinkle with crumb topping mixture.

To make Crumb Topping: Mix together 2 tbsp white sugar, 2 tbsp brown sugar, 2 tbsp flour and 3/4 tsp cinnamon. Cut in butter; mix until small crumbs form. Sprinkle over muffins.

Bake for 15-20 minutes in preheated oven or until done.

    I am SO glad you shared this today! I completely forgot to check our blue berry bushes. They are way out at the edge of the yard and last year I forgot until it was too late!
