The recipe swap hosted by Life as Mom has meatless entrees as its theme this week. I honestly can’t get away with many meatless meals at our house! However, this recipe for baked ziti is wonderful and I have prepared it as written below. But I must note that you can add 1/2 pound or so of browned ground beef to the spaghetti sauce if someone in your family likes a bit more “heartiness” to their meal!
Cheesy Baked Ziti
1/2 pound dried ziti
15 or 16 ounces ricotta cheese (part skim)
3 cups (12 ounces) shredded mozzarella cheese, divided
3 cups (or 26 ounce jar) spaghetti sauce
1/2 cup Parmesan cheese
Bring a large pot of water to a boil; add the ziti. Cook until tender, about 8 minutes; drain.
Place ziti in a large bowl. Mix with ricotta and half of the mozzarella. Grease a 9×13 inch casserole dish. Spread half of the spaghetti sauce on the bottom of the pan. Add the ziti mixture and top with the remaining sauce. Sprinkle with parmesan cheese and remaining mozzarella. Bake uncovered at 350 degrees for 20-30 minutes, until the casserole bubbles on the edges.
This is wonderful served with a green salad and bread or rolls on the side.
