This is a recipe that I actually created myself – and it was even good!! 🙂 With leftover sausage in the freezer and plenty of rice in the pantry, this became a perfect meal for starting off our second week of the Eat from the Pantry Challenge.
Red Beans & Rice
2 tablespoons olive oil
1/2 cup chopped onion
6 ounces smoked beef sausage, cut into bite-size pieces
1 boneless, skinless chicken breast, cut into bite-size pieces
2 cups cooked brown rice
1 can (15 ounces) red beans
2 teaspoons creole or cajun seasoning
1/4 cup water
Heat olive oil in large skillet over medium heat. Add onion and sausage; cook for two minutes. Add chicken breast pieces and cook until chicken is lightly browned. Add rice, beans, seasoning and water. Stir to combine. Cover and reduce heat to low; continue cooking 5-7 minutes or until chicken is completely cooked and all ingredients are heated through.
