In last week’s Tasty Tuesday post, Jen at Balancing Beauty and Bedlam shared a vlog on easy meal planning which inspired me to follow through on a few of her ideas. The main thrust of her post was to take the time to prepare a few dishes to put in the freezer as soon as you get home from a trip to the grocery store.
After purchasing my meat at Publix on Thursday, I decided to quickly prepare a couple of meals to put into the freezer. I mixed up some of my favorite honey-soy sauce marinade and poured it over a couple of chicken breasts in a freezer storage bag. Those will be great to pull out one morning and defrost in the refrigerator to grill or broil for supper.
I then mixed up a batch of meatballs and froze them individually on a baking sheet in the freezer.
Once they were frozen, I put them into a freezer storage bag along with about half a bottle of barbecue sauce and a couple of tablespoons each of Worcestershire and steak sauce.
On the day I decide to have meatballs for supper, I’ll just empty the bag into my slow cooker along with some more barbecue sauce and a few tablespoons of water and have my meat ready for supper.
I’m planning to pick up some more chicken breasts tomorrow and will freeze those with either barbecue sauce or Italian dressing so that I will have another meat dish ready for one of those days when I need a quick supper.
