We like chicken spaghetti a lot around here. Right now in my recipe box I have three different recipes for chicken spaghetti and I just choose one of them according to which variety I’m in the mood for on a particular night.
I’m sharing one of the easiest of those recipes today. I originally got the recipe from a website for people looking for Weight Watcher-friendly meals and have since adapted it a bit.
8 ounces cooked chicken, cubed
3 cups cooked spaghetti (about 4 1/2 oz dry)
3 ounces Velveeta or Velveeta Light
4 1/2 ounces chopped green chiles
1 can Healthy Recipe Cream of Mushroom Soup
Mix Velveeta with soup and chiles and heat over medium-low heat until cheese is melted. Add cooked chicken and spaghetti noodles and stir until combined. Pour into a lightly greased casserole dish and cover. Cook until heated through, approximately 10 minutes at 450 degrees. Serve immediately.
That’s all there is to it!! Easy and yummy!
