Since I acquired this recipe from an eBay message board a couple of years ago, I have seen it everywhere! It’s what’s on the menu tonight and is one of mine and my older daughter’s favorite meals. She usually eats second and third helpings! I love putting it together a few hours before supper, refrigerating it, then just putting it in the oven to bake when I’m ready.
Poppy Seed Chicken
4 chicken breasts, cooked and cut up
1 can cream of chicken soup
8 oz. low fat sour cream
2 rolls Ritz crackers, crushed
2 tbsp poppy seeds
1 stick butter, melted
Preheat oven to 350 degrees. Mix melted butter, crackers and poppy seeds and set aside. Mix chicken filling ingredients and set aside. Layer 1/3 of the cracker mix in baking dish. Add chicken mix, then top with the remaining cracker mix. Bake for about 25 minutes, uncovered, until crackers on top start to brown.
I’ll be serving this with rice, mixed vegetables and fruit. Should be a yummy supper!
