Okay, I guess it could be debatable as to whether or not this is the world’s easiest side dish, but it sure qualifies in my book! Roasted potatoes are so simple to make and are one of my girls’ favorite foods.
I’ve used about any kind of potato for this recipe, including red, white, sweet and Idaho baking potatoes. I think my favorite are the new red potatoes with the skins still intact. Trying sweet potatoes this way wasn’t quite as popular in my house. I’ve heard you can use this technique on many vegetables and have tried it with broccoli; I will say that I was the only one who was a fan of that!
2 to 3 pounds potatoes, peeled (if desired) and chopped into large cubes
Heat oven to 400 degrees. Spray large baking pan with cooking spray. Place cubed potatoes into large bowl. Drizzle with enough olive oil to lightly coat. Sprinkle with salt and pepper to taste. Arrange potatoes in a single layer on prepared baking sheet. Bake for 15 minutes; turn potatoes over and bake an additional 10 minutes. Immediately after removing from oven, sprinkle lightly with additional salt.
If desired, you can give the potatoes a bit more kick by sprinkling with a bit of garlic powder, red pepper flakes or paprika before baking. I serve these alot with cheeseburgers, fish and about any grilled meat. There are rarely any leftovers!!
