Today we are sharing cookie recipes for Life as Mom’s Ultimate Recipe Swap. I recently posted one of my favorite butter cookie recipes and you can read it here. This time I thought I would share another cookie that I have a hard time leaving alone! Even the batter from this recipe is delectable (not that I nibble while I’m baking, of course!)
1 cup light brown sugar, packed
1 cup granulated sugar
1/2 cup butter
1/2 cup margarine/shortening
1 tsp vanilla extract
1 1/2 cups flour
1 tsp salt
1 tsp baking soda
3 cups quick-cooking oats
Cream sugars with butter and shortening until light and fluffy. Thoroughly blend in eggs and vanilla extract. Combine salt and baking soda with flour. Mix into batter gradually. Quickly fold in oatmeal.
Drop by teaspoonfuls onto greased cookie sheets. Bake at 350 degrees for 8-10 minutes or until golden around the edges.
